How to Make The Ultimate Croque Monsieur with Chef De Cuisine Gregoire
Create the famous "Croque-Monsieur" of heachef Gregoire Berger's childhood memory at home:
Step 1: Prepare the Béchamel
• In a saucepan put the melted butter and add the flour.
• Mix with a spatula, leave it to cook on low heat for a few minutes, without coloring. (This is called a “Roux”)
• On medium heat, gradually pour the warm milk and mix regularly with a whisk
• Let boil for 5 minutes, add the cheese
• Season the bechamel with salt, pepper, and nutmeg
Step 2 Prepare the Croque-monsieur
• Flatten the slice of bread with a rolling pin
• Moisten lightly with the melted buckwheat butter with a brush
• Add the béchamel, grated pecorino, and the veal
• Put sandwich together
• Let bechamel solidify for 20 minutes
• Add buckwheat butter to a hot pan
• Place one side of the sandwich until browned
• Take out the sandwich and add more butter to pan
• Brown other side
Step 3 Plate the Croque-monsieur
• Slice sandwich gently into half
• Take secret egg yolk mixture and pipe onto sandwich
• Optional add shaved truffle and drizzle truffle oil

Bechamel:
40 gr Unsalted butter
40 gr Wheat flour
50 cl 1/2 skimmed milk
3 pinches of Salt
2 pinches Pepper
1 pinch Nutmeg
200 gr Pecorino (cheese)
Croque-Monsieur :
300gr quality veal ham
20 slices of sandwich bread
200gr Bechamel
50gr Pecorino
50gr Buckwheat butter
200gr Black truffle (optional)
Truffle oil
