Step 1: Prepare the topping
• Add roasted peanut, fried garlic, black sesame seed and all ingredients for topping
• Mix all with seasoning for 30 seconds
Step 2: Prepare the Sea bass
• Coat fish with potato starch
• Heat a pan with corn oil, sear the skin of the filet until it gets crispy and golden brown
• Turn on the oven at 180 C and grill the seabass for 7 - 10 min
Step 3: Prepare the Ginger soya Sauce
• Mix all ingredients for soya ginger sauce and broil in wok for 2 minutes.
• Then set aside.
Step 4: Platting
• Place cooked seabass on the plate with the skin up
• Add all your prepared topping on it
• Pour some ginger soya on the plate and serve the rest on the side
• Garnish with spring onion
Ingredients for 4 portions:
200gr Channel seabass fillet
Potato starch
½ tsp corn oil
Topping:
20 gr Spring onion
20gr Chopped red onion
30gr Roasted peanut crushed
15gr Fried garlic
15gr Black sesame seed
½ tsp Cumin powder
1 tsp Korean red pepper crushed
½ tsp Garlic powder
½ tsp White pepper powder
¼ tsp Salt
½ tsp Sugar
Ginger soya sauce:
20 ml Dark soya sauce
100ml Light soya sauce
20 ml Maggi seasoning sauce
10 ml Fish sauce
20 gm Sugar
10 ml Sesame oil
20 gm Ginger
50 ml Water
1tsp chopped garlic
